Open Chicken and Avacado Sandwich

Open Chicken and Avocado Sandwich

Preparation time: 5 minutes
Serves 2


Ingredients
1 tbsp mayonnaise
1 tsp roasted red pepper pesto
2 slices rye seeded bread
1 summer avocado
1 lime
1 skinless chicken breast, cooked and sliced
Handful lettuce leaves
Black pepper
Extra lime wedges, to serve

Method


Mix the mayonnaise with the pesto and spread evenly on the rye bread.
Peel, stone and slice the avocado and toss gently in the juice of ½ the lime to avoid browning.
Divide the avocado between the open sandwiches and top with the sliced chicken. Top with the
lettuce leaves. Sprinkle over the juice of ½ lime and season with freshly ground black pepper.
Servewith extra lime wedges.
